As local winemakers in Northern California we rise early and chase the sun watching the growing season closely. Our morning ritual, like many people, begins with coffee. We have always been enticed by the direct connection of site, variety, treatment/process and how these elements affect aroma and flavor. Coffee is like grapes: grown, harvested, and fermented at the farm and the growers hand. Our pursuit at Mad Fritz Coffee (our children's names: Maddy and Fritz) is to seak and tease out flavor from these raw beans to offer a dynamic and cup of coffee.
Our approach to roasting is lighter in style offering more acidity and more expression of origin than roast. Our LIGHT roasts would technically be referreded to as New England/American while MEDIUM roasts are more City Roast to Full City Roasts in style. Our DARK roasts are Full City to Espresso when some oils may begin to appear on the bean (see Curiosity link in menu).
